La Fringale is a delicatessen that opened its doors a year ago between Hammamet and Nabeul, in the Deux Oueds. The project is supported by two partners: Nawal Boujemma Baccar and Geneviève Ben Moussa. In their pretty shop you can find jams, Tunisian cheeses, tarts, fresh pasta , delicatessen , duck breast, cakes … You can order his “aoula” composed of “hlelem”, noisser , Borghol … Interview with Nawel Boujemaa Baccar to understand her offer, what the delicatessen brings to the region, its opinion on the evolution of artisans, …. Interview conducted by Amel DJAIT
1001tunisie: When and how did the project start?
Nawel Baccar: 4 years ago. My partner and I organized empty lofts and private sales. For my part, I took care of Christmas market decorations. Many of the craftsmen I was soliciting were with me in high school. The idea then began to grow. It became clear that we had to throw our delicatessen as soon as possible.
Who are your artisans? What are your products? Who are your clients ? Do you have tourists?
We offer products made by craftsmen based in Tunisia. They are Tunisian, Italian, French, English, Luxemburgish, German …
Our target? Gourmands ! All those who like to do and have fun! La Fringale offers jams, rillettes, fatty faith, delicatessen, a large range of cheese, tuna, spices … In the region, there are also many expatriates! Nabeul is the center of the French School and it is a great city. Hammamet is for its part an important center of stay for French and Italians who have chosen Tunisia for their retirement.
In terms of offers, La Fringale also offers “La 3oula” with couscous, noisser, “hlelem”, “borghol”,
And for the special occasions that you propose?
Delicatessen platters, cheese platters … La Fringale offers all kinds of cold meats: pork, beef, chicken.
We also create many products to accompany events such as Valentine’s Day, Mother’s Day, Kid’s Cake, Candlemas, Halloween, Christmas, New Year’s Eve …
How does your grocery store differ from others?
We are Belgian! To laugh at it, we often say we are half couscous / half fried. All the difference is there!
Is not it difficult to launch a similar case at a difficult economic time and also morose for the purchasing power of Tunisians?
We decided to go ahead with the context. We felt that we should do it, for us and for the region, which we particularly love! We want to give a little extra! We try to satisfy our customers to the maximum.
Through La Fringale, we have succeeded in transmitting our love and passion to customers. The Tunisian loves to eat and he is right! It’s a pleasure to be able to pamper him!
Do you find that Tunisian products are improving? Is there better packaging, better marketing? …
There is nothing to reproach our craftsmen, otherwise we would not work with them! The craftsmen are young. They are full of ideas and “peps”! And that suits us well! Packaging is at the top. We have a very good communication with our craftsmen. We like to work with them. We encourage them and trust them in the quality of their products. The Tunisian brands really take colors and I would mention among others Bleu Citron, La Phénicienne, Le Pescadou, La Biche à Lait …
