Malek Ladjimi at “La Closerie”
Chic and trendy, “La Closerie” celebrated in 2012 its 20th anniversary. Held passionately by Ladjimi Malek, a pretty woman with green eyes, which combines talents of fine cooking and emeritus entrepreneur.
1001Tunisie: and if the “the Closerie were to be a starter, main course, desert and a drink?
Malek Ladjimi: Inbound spaghetti with bottarga, a dish, a filet with balsamic vinegar and a dessert charlotte. It is the cake I made to my friends when I was 17. Beverage, champagne of course for its festive side!
What are the iconic products of your kitchen? Those you could not live without.
The olive oil of course, tomatoes, basil … Very Mediterranean products!
What lacks in Tunisian cuisine so that it becomes international?
Inventiveness and creativity. I think it is important that young leaders revisit the Tunisian dishes and reinventing.
Why don’t we see the birth of a new generation of Tunisian chefs able to export our gastronomy and catch up with the renowned world cuisines?
The head of trade is not sufficiently valued in Tunisia. Cooks who leave school lacking creativity. They perform the same revenue indefinitely.
Nabiha Djait restaurant “Dar El Jeld”
At 50, Nabiha Djait embarked in an adventure that will shake up her life (she continues her worldliness and bridge games) and propel the heart of the creation of the “Dar El Jeld” restaurant. Since become the temple of art to receive in the Medina, the “Dar el Jeld” is obliged to stop the country’s distinguished guests.
Nabiha Djait went around to her friends and family, collected the revenues, calculated doses, recruited cookers tested suppliers and reworked the flavors to offer a genuine card as much as precious and refined. For 25 years, she leads a team of over 70 people and ensures the gastronomic fate of “Dar El Jeld,” the youngest of her “Diwan”, dedicated to banquets
What is the secret of “Lella Nabiha,” as some used to call her? She responds with a simple sophistication: “We almost eat what we cooked at home, back when we had time, grandmothers, passion for good things …”
In fact, “Dar El Jeld” embodies the art of living at the Tunisoise. Located in an eighteenth-century palace, restored and located on the edge of the souks, you can not resist the urge to taste her “Nouasser” or her “aknaf”.
Thus, the “Dar El Jeld” is one of the few restaurants where you can discover the Tunisian desserts, such as “assida” the “Ashura” or “tarayoun”. Recipes that are not carried in the houses as their implementation is complex as their preparation time.
