Latifa Khairi: Gafsa was chosen simply because we wanted a magrébin dish (the contest between Algeria and Tunisia) and that could be quite accessible and known internationally. We selected twenty dishes. At the end, the “Berkoukech” won.

The “Berkoukech” is it the most popular dish in the city and the region of Gafsa?

This is a dish that is little known and that really has great potential. In families in the region, the recipe is passed down from mother to daughter. It is a festive dish and great opportunities that we appreciate and estimated fair value.
So far, it has almost never been used in restaurant menus. A real pity! With “Gafsa Flavours”, we are trying to incorporate and promote.
The chef Mauro Gaspari (Italian chef and jury member of our competition) will make during the month of October a course on “Berkoukech” in several establishments in Rome.

Are there any particular dishes that have disappeared on which your Association works?

Sadly pleinty. We try to find them and work from books. The recipes are hard to find when they disappear

What is the Association “Flavors of my country”?

The Association, which I chair, was created in early June 2012. Its objective is to safeguard the Tunisian culinary heritage. During my travels I have unfortunately discovered that our food and very little and poorly understood or represented. It’s wanting to do something I’ve realized that the problem was deeper. Our kitchen is lost and dispersed without anyone making the slightest gesture to save or preserve. With a few passionate, we set a goal, save what can be saved.
