“L’Arbre à couscous” is a small canteen of midday where the promise is that of an exceptional couscous!
Could it be that the presence of Gerard, happy patron of the place, and his generous smile adds to the flavor? It’s possible. What is certain is that in this tiny restaurant of Marsa Ville, one does not joke neither with the products nor with the great values of the Tunisian Jewish cuisine.
Here, couscous is king. It is sublimated by crisp vegetables, fresh fish, stuffed squid, soft lamb and exceptional dumplings …. On a small buffet in the room, you have the choice between 3 kinds of preparations: A fine grain mixed with a slightly raised sauce, a natural grain and a third mixed with fennel in a sort of “farfoucha”.
On the same table are the vegetables, the starchy foods, the sauce, the prickleys and the famous balls; Those for meat, meat and vegetables, chicken and fish. Tender, fragrant, tasty, generous, they are by themselves a whole dish!
In the kitchen, a small team is busy, surrounded and supported by Gérard in the room that receives, teases, kisses, proposes, passes orders, … .Some couscous, especially that with fish or squid are generously served in a “tebsi” . The service is efficient and fast. The “lben” is of course required.
You understand, I loved “L’Arbre à Couscous”; The cuisine, the hospitality, the simplicity, the concept, the fable of the couscous tree and the friends we meet by chance … Here, you must arrive early as the dishes of the day leave like hotcakes.
